Claudio Chinali, Culinary Consultant,
Borsa Restaurants Group , Turkey. Claudio has a significant
experience in gastronomy and restaurant management. After
his scientific studies in Italy he started his professional
training in some of the best Italian Michelin starred
restaurant . In 2008 he was awarded best young talent
of Italian cuisine. He strongly believes in the financial
economic approach to the formation of the role of chef
as a new profession for the tourism Market. He is a consultant
for several restaurants, in which he solves practical
problems and economic management issues. He is currently
engaged in the Borsa Restaurants as internal consultant

Michael Kern, Corporate Communications
Director, DEKON Group Michael's business origins are very
domestic, he started his business career in a family retail
company in Vienna, Austria. Early he became active in
several international associations and after selling his
business he became Director for Europe at Junior Chamber
International (JCI). Later he was promoted Senior Director
and when he left JCI after 6 years of service as Chief
Operations Officer, he had represented JCI towards UN,
UNESCO, ICC and many other international organizations.
He spent extensive time at countless places around the
globe, especially in Europe, Asia and USA, being an average
of 180 days a year on the road. As COO he was overseeing
besides several departments also all international meetings.
Currently he represents the DEKON Group of Companies,
an internationally operating professional conference organizer
company headquartered in Istanbul, towards its international
associates and he supervises, besides the Corporate Communications,
also the Association Management Services of the Dekon
Group. |

Giuseppe PRESSANI, Exsecutive Chef
and consultant of the new openings of the Paper Moon FOOD
INTERNATIONAL SA Born in Naples in 1967, and descended
from three generations of restaurateurs has three brothers
who follow the family tradition with a strong enthusiasm,
In 1980 the family moved to Milan to open a restaurant
with his father and three brothers. In 1989 I start collaboration
with the group PM as chef asistente in New York, 1991
Japan 1994 return to in New York, 1996 Istanbul, 2002,Telaviv
Israel 2004 Moscow 2005 return to Istanbul still now,
Today I have a share in the two restaurants in Milan with
my three brothers |
